I hope everyone is doing great out there in cyberspace. This past weekend I had a BLAST hanging with my family. Every summer we have a quasi family reunion. I was super busy from Thursday morning until Sunday evening, cooking and prepping to feed our massive clan. I made several side dishes including marinated mini heirloom tomatoes w/ mozzarella and homemade croutons. I made a tangy Cucumber and Carrot salad; Mini Potato Medley Salad, and Roger Mooking's Pasta Salad w/ Green Onion Dressing. I will share those recipes with you at a later date and time. I want to focus on the Turkey Breakfast Sausage Patties I made for breakfast on Sunday morning.
My cousin from Philly came down with his daughter Jade and they are Muslim and don't eat pork. So I had to make an alternative breakfast meat. I had a pound of ground turkey that I through some familiar Mexican spices in to and created a delicious sausage. The sausage is so good, you will be fooled as to what type of meat it is. Your first guess would not be turkey. Try it and tell me what you think! Enjoy.
MEXICAN BREAKFAST SAUSAGE
1 pound of Ground Turkey
1 teaspoon onion powder
1 teaspoon garlic powder
1 1/2 tablespoons kosher salt
1 teaspoon ground black pepper
1 teaspoon red pepper flakes
2 teaspoon Spanish Paprika
2 teaspoons Cumin
2 teaspoons Chili Powder
2 tablespoon Brown Sugar
1 tablespoon of Olive Oil
Combine all ingredients together in a medium size bowl except for olive oil. Heat skillet to medium heat heat and add Olive Oil. Form the meat into 3oz size patties and cook for 3 to 4 minutes per side. Makes approximately 15 patties.
TASTY TIPS
This sausage goes well with eggs and potatoes.
You can make the patties and lay them out on a cookie sheet and freeze them. Once frozen you can place them in a plastic bag and take them out of the freezer as needed.
